Lavender and Lemon Zest Spiced Bread

So, we’ve all used lemon zest in nearly everything from cakes to cookies to muffins and even bread. But who’s tried it on herbed bread where lavender is the chief spice? I used it to prepare some quick grab-me donuts the other day and thought this heavenly flavor would taste great on organic bread.

Here are the primary ingredients for our herbed bread, featuring lavender and lemon zest. 

  • 3 cups bread flour
  • 1 cup wholewheat flour 
  • 1 packet (2 ¼ tsp) active dry yeast
  • 1 ½ teaspoons salt
  • 1 tablespoon dried lavender buds
  • Zest of 1 lemon
  • 1 ½ cups warm water
  • Olive oil for greasing
  • Additional bread flour for dusting (½ cup)

Lavender and Lemon Zest Artisan Bread Instructions

Once you have all the ingredients ready in one place, here are the instructions to bake this yummy, unique bread. 

Step 1: Mix the dried ingredients

In a large mixing bowl, combine the flour, yeast, salt, dried lavender buds, and lemon zest. Next, gradually add the warm water to the dry ingredients while stirring until a shaggy dough forms.

Step 2: Knead the dough 

Knead the dough on a floured surface for about 5-7 minutes until it becomes smooth and elastic. Then, place the dough in a lightly greased bowl, cover it with a damp cloth, and let it rise for about 1 hour or until it has doubled in size.

Step 3: Prepare the oven 

Preheat your oven to 375°F (190°C) and place an empty baking dish on the bottom rack. This will create steam for a crisp crust. Punch down the dough and shape it into a round loaf, then place it on a parchment-lined baking sheet.

Step 4: Bake 

Make shallow slashes on top of the loaf with a sharp knife. This gives the bread a nice shape and appearance, though it’s optional. You can now place the bread in the preheated oven and pour a cup of hot water into the empty baking dish to create steam. Bake for 25-30 minutes or until the bread is golden brown and sounds hollow when tapped. Allow the bread to cool on a wire rack before slicing.
