Caraway and Fennel Spiced Bread

Baking is one of those pastimes I relish, especially during weekends or whenever I don’t have much on my hands. Since I’m an herb and spice addict, my baking creations must always feature a unique taste beyond the ordinary. 

I especially love to experiment with different flavors, and of late, I’ve been keen on pairing rare herbs to see how those distinct flavors turn out. The idea is to identify the health benefits of each herb and what the combo tastes like, and you’re free to spruce up anything you crave. That’s how I ended up making this caraway and fennel spiced bread. 

The sharp, anise, and citrusy taste of Caraway combined with the sweet yet peppery hint of fennel turned what would have been an ordinary loaf into a mouthwatering treat. Here’s the recipe in case you want to try it out.

  • 1 1/2 tablespoons of fennel seeds
  • 1 3/4 cups of warm water
  • 2 tablespoons of olive oil
  • 1 tablespoon of honey

Here’s a fun step-by-step guide for baking caraway and fennel spiced bread. It’s fun and quick. 

Step 1: Activate the Yeast

In a small bowl, combine warm water and honey. Sprinkle the yeast over this mixture and let it sit for about 5 minutes or until it becomes frothy.

Step 2: Mix the Dry Ingredients

In a large bowl, combine the rye flour, all-purpose flour, salt, caraway seeds, and fennel seeds.

Step 3: Combine Wet and Dry

Pour the yeast mixture and olive oil into the bowl with dry ingredients. Stir until it forms a shaggy dough.

Step 4: Knead the Dough

Turn the dough onto a floured surface and knead it for about 8-10 minutes or until it’s smooth and elastic.

Step 5: First Rise

Place the dough in a greased bowl, cover it with a damp cloth, and let it rise for about 1 hour or until it has doubled in size.

Step 6: Shape the Loaf

Once the dough has risen, punch it down and shape it into a loaf. Place it in a greased loaf pan.

Step 7: Second Rise

Cover the loaf pan with a damp cloth and let it rise again for about 30 minutes.

Step 8: Preheat and Bake

Preheat your oven to 375°F (190°C). Bake the bread for 30-35 minutes or until it sounds hollow when tapped on the bottom.

Step 9: Cool and Slice

Allow the bread to cool on a wire rack for at least 30 minutes before slicing.
