Cumin And Coriander Spiced Loaf

I use a lot of cumin and coriander in my cooking and they have that distinct flavor that can enhance the taste of the most ordinary dishes to something special.

2 cups of bread flour

wholewheat flour 1 cup

1 packet (2 1/4 tsp) instant yeast

Salt 1 1/2 tsp

Sugar 1 tbsp

Roasted cumin (ground) 1 1/2 tsp

1 1/2 tsp ground coriander or 4 tbsp (chopped) if using fresh leaves 

Warm water 1 1/4 cups

2 tbsp olive oil (add more for greasing)

Step 1: Prepare the yeast 

In a small bowl, combine the instant yeast with sugar then add warm water and stir gently to dissolve the yeast and sugar. Allow the yeast mixture to sit for about 5-10 minutes until it becomes frothy and bubbly. This indicates that the yeast is activated and ready to use

Step 2: Mix the dry ingredients 

In a large mixing bowl, combine the flour, yeast, salt, ground cumin, and ground coriander.

Step 3: Add water 

Gradually add the warm water and olive oil to the dry ingredients, forming a dough.

Step 4: Kneed

Knead the dough on a floured surface for about 5-7 minutes until it becomes smooth and elastic.

Step 5: Let it Rise 

Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm, draft-free place for about 1 hour or until it has doubled in size.

Step 6: Prepare the oven

Preheat your oven to 375°F (190°C).

Step 7: Get ready to bake 

Punch down the dough to remove excess air, then shape it into a loaf. Next, place the loaf on a baking sheet and let it rest for another 15-20 minutes.

Step 8: Bake your bread 

Bake in the preheated oven for 30-35 minutes or until the loaf is golden brown and sounds hollow when tapped on the bottom.
